Ingredients

  • 1 whole Acorn squash
  • 2 tablespoons Butter
  • 2 tablespoons Brown sugar
  • 0.25 teaspoons Ground cinnamon
  • 0.25 teaspoons Salt

Directions

Step 1

Wash the acorn squash thoroughly to remove any dirt or debris.

Step 2

Using a sharp knife, carefully cut the acorn squash in half from stem to tip.

Step 3

Scoop out the seeds and stringy pulp from the center of each half using a spoon.

Step 4

Place the squash halves cut side down in a microwave-safe dish. Add about 1/4 inch of water to the dish to help steam the squash while cooking.

Step 5

Microwave on high for 5 minutes. Carefully flip the squash halves so the cut sides are facing up.

Step 6

In each hollowed-out center of the squash halves, place 1 tablespoon of butter, 1 tablespoon of brown sugar, a pinch of ground cinnamon (about 1/8 teaspoon each), and a pinch of salt (about 1/8 teaspoon each).

Step 7

Return the dish to the microwave and cook on high for an additional 5 minutes, or until the flesh of the squash is tender and can be easily pierced with a fork.

Step 8

Carefully remove the dish from the microwave (it will be hot). Let the squash cool for a minute or two before serving.

Step 9

Serve the acorn squash warm, with the melted butter and sugar mixture drizzled over the top. Enjoy!
