  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 bay leaf
  • 0.25 cup, chopped (for garnish, optional) fresh cilantro
  • 0.5 cup (for garnish, optional) shredded cheddar cheese
  • 0.25 cup (for garnish, optional) sour cream

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.

Add the diced onion and sauté for 4-5 minutes until softened and translucent.
