Ingredients

  • 8 pieces boneless, skinless chicken thighs
  • 3 peppers chipotle peppers in adobo sauce
  • 2 tablespoons adobo sauce
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 3 cloves garlic cloves
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

In a blender or food processor, combine the chipotle peppers, adobo sauce, olive oil, lime juice, garlic cloves, ground cumin, paprika, oregano, salt, and black pepper. Blend until a smooth marinade forms.

Step 2

Place the chicken thighs in a large bowl or resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is thoroughly coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for maximum flavor.

Step 3

Preheat a grill, grill pan, or skillet over medium-high heat. If grilling, oil the grates to prevent sticking.

Step 4

Remove the chicken from the marinade, letting any excess drip off, and place it on the hot grill or skillet. Discard the remaining marinade.

Step 5

Cook the chicken for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred on the outside.

Step 6

Remove the chicken from the heat and let it rest for 5 minutes before serving.

Step 7

Serve Michelle's Chipotle Chicken with your favorite sides, such as rice, beans, salad, or in tacos or burrito bowls.
