Ingredients

  • 3 pounds Beef chuck roast
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Vegetable oil
  • 1 large Yellow onion, chopped
  • 4 medium Carrots, peeled and cut into chunks
  • 4 medium Russet potatoes, peeled and quartered
  • 3 stalks Celery stalks, cut into chunks
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Tomato paste
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Rosemary, dried
  • 2 tablespoons Cornstarch
  • 2 tablespoons Cold water

Directions

Step 1

Season the beef chuck roast on all sides with salt, black pepper, and garlic powder.

Step 2

Heat the vegetable oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes on each side until browned. Remove from the skillet and set aside.

Step 3

Place the chopped onion, carrot chunks, potato quarters, and celery chunks in the bottom of a large crock pot.

Step 4

Place the seared roast on top of the vegetables.

In a medium bowl, whisk together the beef broth, Worcestershire sauce, tomato paste, dried thyme, and rosemary. Pour the mixture over the roast and vegetables in the crock pot.
