Ingredients

  • 6 cups chicken or vegetable broth
  • 4 cups fresh baby spinach
  • 3 pieces large eggs
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 teaspoons soy sauce
  • 2 cloves garlic, minced
  • 0.5 teaspoons salt
  • 0.25 teaspoons ground white pepper
  • 1 teaspoons sesame oil
  • 2 tablespoons green onions, finely chopped

Directions

Step 1

In a large pot, bring the chicken or vegetable broth to a gentle boil over medium heat.

Step 2

Stir in the minced garlic, soy sauce, salt, and ground white pepper. Let this simmer for 2-3 minutes to infuse the flavors.

Step 3

Add the fresh baby spinach to the broth and cook until it wilts, about 2-3 minutes.

Step 4

In a small bowl, mix the cornstarch and water until fully dissolved to create a slurry. Slowly whisk the slurry into the simmering soup to slightly thicken it.

Step 5

Crack the eggs into a separate bowl and beat them well using a fork or whisk.

Step 6

With the soup simmering, use a spoon or ladle to gently swirl the soup in one direction. Slowly pour the beaten eggs into the soup in a thin stream while continuing to swirl. The eggs will cook instantly and form delicate ribbons.

Step 7

Remove the pot from heat and stir in the sesame oil for a fragrant finish.

Step 8

Ladle the soup into bowls and garnish with the finely chopped green onions before serving.
