Ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, melted and cooled
  • 1 cup whole almonds (toasted and roughly chopped)
  • 1 teaspoon optional: orange zest (grated)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon, nutmeg, and salt until well combined.

Step 3

In a separate medium bowl, beat the eggs lightly, then mix in the vanilla extract, melted butter, and orange zest (if using).

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring until a dough begins to form.

Step 5

Fold in the chopped almonds, ensuring they are evenly distributed throughout the dough.

Step 6

Transfer the dough to the prepared baking sheet and shape it into a log roughly 12 inches long and 3 inches wide. Flatten the top slightly.

Step 7

Bake the log in the preheated oven for 25 minutes, or until it is firm to the touch and lightly golden.

Step 8

Remove the log from the oven and allow it to cool on the baking sheet for 10 minutes. Reduce the oven temperature to 325°F (165°C).

Step 9

Using a serrated knife, slice the log diagonally into 1/2-inch-thick biscotti pieces.

Step 10

Arrange the biscotti, cut side down, back onto the baking sheet. Bake for an additional 12-15 minutes, flipping them halfway through, until they are dry and crisp.

Step 11

Remove the biscotti from the oven and transfer them to a wire rack to cool completely.

Step 12

Store the cooled biscotti in an airtight container at room temperature for up to 2 weeks.
