Ingredients

  • 1 bunch asparagus
  • 6 strips (or 1 cup salmon, flaked) bacon (or cooked salmon, flaked)
  • 6 large eggs
  • 1 cup heavy cream
  • 0.5 cup milk
  • 1 cup cheddar cheese, shredded
  • 0.25 cup Parmesan cheese, grated
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9-inch pie dish or similar-sized baking dish with cooking spray or a little olive oil.

Trim the tough ends off the asparagus. Cut the remaining spears into 1-inch pieces and blanch them in boiling water for 2-3 minutes, until bright green and tender-crisp. Drain and set aside.
