Ingredients

  • 1 head (about 2 pounds) Green cabbage
  • 8 slices Bacon
  • 1 large (finely sliced) Yellow onion
  • 3 cloves (minced) Garlic
  • 12 ounces Beer (lager or ale)
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons (chopped, optional for garnish) Parsley

Directions

Step 1

Remove the outer leaves of the cabbage, cut it into quarters, and then slice it into thin shreds. Rinse thoroughly under cold water and set aside.

Step 2

In a large skillet or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon, drain on paper towels, and crumble it into small pieces. Set aside. Leave about 2-3 tablespoons of bacon fat in the pan.

Step 3

Add the sliced onion to the pan and sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the shredded cabbage to the pan and toss to combine with the onions and garlic. Cook for 5-7 minutes, stirring frequently, until the cabbage begins to wilt.

Step 5

Pour in the beer and bring the mixture to a simmer. Stir in the apple cider vinegar, sugar, salt, black pepper, and paprika. Cover the pan and let the cabbage cook over medium-low heat for 15 minutes, stirring occasionally.

Step 6

Uncover the pan and continue to cook for an additional 5-7 minutes, allowing some of the liquid to evaporate while the cabbage becomes tender.

Step 7

Stir in the crumbled bacon and adjust seasoning with salt and pepper, if needed.

Step 8

Serve hot, garnished with chopped parsley, if desired. Enjoy as a side dish or pair with sausages, grilled meats, or crusty bread.
