Ingredients

  • 4 medium zucchini
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 1 small lemon

Directions

Step 1

Preheat your grill to medium-high heat (around 400°F/200°C). If using an indoor grill pan, heat it over medium-high heat.

Step 2

Wash the zucchinis thoroughly and pat them dry. Trim off the ends, then slice the zucchinis lengthwise into 1/4-inch-thick planks.

Step 3

In a small bowl, whisk together the olive oil, garlic powder, Italian seasoning, salt, black pepper, and red pepper flakes.

Step 4

Brush both sides of the zucchini slices with the seasoned olive oil mixture, ensuring an even coating.

Step 5

Place the zucchini slices on the preheated grill. Grill for 4-5 minutes on each side, or until you see nice grill marks and the zucchini becomes tender but not overly soft.

Step 6

While grilling, slice the lemon in half. In the last minute of grilling, place the lemon halves cut-side down on the grill to lightly char them.

Step 7

Remove the zucchini slices and lemon halves from the grill. Arrange the zucchini on a serving platter.

Step 8

Squeeze the grilled lemon over the zucchini and serve immediately. Optionally, garnish with fresh herbs like parsley or basil.
