Ingredients

  • 1.5 cups All-purpose flour
  • 1 cup Granulated sugar
  • 0.5 cup Cocoa powder (unsweetened)
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cup Whole milk
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.5 cup Boiling water
  • 1.5 quarts Chocolate or vanilla ice cream
  • 1 cup Heavy cream
  • 1 cup Dark chocolate chips
  • 2 tablespoons Butter (unsalted)
  • 0.5 cup Chocolate sprinkles or shavings (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan. Line the bottom with parchment paper for easy release.

Step 2

In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.

Step 3

Add the egg, milk, oil, and vanilla extract to the dry ingredients. Mix until well combined.

Step 4

Slowly pour in the boiling water while stirring. The batter will be thin; this is normal.

Step 5

Pour the batter into the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Step 6

Cool the cake completely on a wire rack. Once cooled, carefully remove it from the pan.

Step 7

Soften the ice cream slightly by leaving it at room temperature for 10-15 minutes. Spread it evenly over the cooled cake, forming a thick layer. Smooth the top with a spatula.

Step 8

Place the cake in the freezer for at least 2 hours or until the ice cream is firmly set.

Step 9

To make the ganache, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Remove from heat and pour over the dark chocolate chips in a heatproof bowl. Let sit for 2 minutes, then whisk until smooth.

Step 10

Stir the butter into the ganache until glossy and fully incorporated. Let it cool slightly before pouring over the frozen cake to create a smooth, dripping effect.

Step 11

Immediately sprinkle chocolate sprinkles or shavings on top of the ganache, if desired.

Step 12

Return the cake to the freezer for another 30 minutes to firm up the ganache.

Step 13

Slice, serve, and watch your guests marvel at Michael's Fabulous Chocolate Mountain Ice Cream Cake!
