Ingredients

  • 3 large ripe bananas
  • 113 grams unsalted butter
  • 150 grams granulated sugar
  • 50 grams brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 250 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 60 milliliters whole milk
  • 50 grams chopped walnuts (optional)
  • 50 grams chocolate chips (optional)

Directions

Step 1

Preheat your oven to 175°C (350°F) and line a 12-cup muffin tin with paper liners or lightly grease it with cooking spray.

Step 2

In a large mixing bowl, mash the ripe bananas using a fork or potato masher until smooth.

Step 3

Melt the unsalted butter in a microwave-safe bowl or on the stovetop, then let it cool slightly. Add the melted butter, granulated sugar, and brown sugar to the mashed bananas and mix well until combined.

Step 4

Beat in the eggs, one at a time, and then stir in the vanilla extract.

Step 5

In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt.

Step 6

Gradually add the dry ingredients to the banana mixture, alternating with the milk. Begin and end with the dry ingredients, stirring gently with a spatula until just combined. Avoid overmixing.

Step 7

If using, fold in the chopped walnuts or chocolate chips for added texture and flavor.

Step 8

Evenly divide the batter among the prepared muffin cups, filling each about 2/3 full.

Step 9

Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 10

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Step 11

Serve warm or at room temperature and enjoy!
