Ingredients

  • 2.5 lbs Tri-tip roast
  • 2 tbsp Olive oil
  • 1.5 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Smoked paprika
  • 0.5 tsp Dried thyme
  • 1 cup Beef broth
  • 2 tbsp Worcestershire sauce
  • 1 Yellow onion, diced
  • 3 Garlic cloves, minced
  • 3 Carrots, cut into chunks
  • 1 lb Baby potatoes, halved

Directions

Step 1

Pat the tri-tip roast dry with paper towels and rub it with the olive oil.

Step 2

In a small bowl, mix together the salt, black pepper, garlic powder, onion powder, smoked paprika, and dried thyme. Rub this seasoning mixture all over the tri-tip.

Step 3

Heat a large skillet over medium-high heat. Sear the tri-tip on all sides until browned, about 2-3 minutes per side. Remove from skillet and set aside.

Step 4

In the skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant.

Step 5

Place the carrots and baby potatoes in the bottom of the slow cooker. Lay the seared tri-tip on top of the vegetables.

Step 6

Pour the sautéed onion and garlic over the tri-tip. Add the beef broth and Worcestershire sauce to the slow cooker, ensuring the vegetables are partially submerged in the liquid.

Step 7

Cover and cook on LOW for 8 hours or until the tri-tip is tender and easily shredded with a fork.

Step 8

Once cooked, remove the tri-tip and let it rest for 10 minutes before slicing against the grain.

Step 9

Serve the sliced tri-tip alongside the roasted vegetables, drizzled with the flavorful juices from the slow cooker.
