Directions

Step 1

Rinse the brown rice under cold water in a fine-mesh sieve until the water runs clear.

Step 2

In a medium-sized pot, combine the brown rice and 2 cups of water. Bring to a boil over high heat, then lower the heat to a gentle simmer. Cover and cook for 40 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it rest, covered, for 5 minutes.

Meanwhile, heat the olive oil in a large skillet over medium heat.
