Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Minced garlic
  • 2 cups Enchilada sauce
  • 1 packet Taco seasoning
  • 2 cups Cooked white or brown rice
  • 1 cup Canned black beans, drained and rinsed
  • 1 cup Canned corn, drained
  • 6 pieces Large flour tortillas
  • 2 cups Shredded Mexican cheese blend
  • 1 cup Sour cream
  • 2 tablespoons Cilantro, chopped (optional)
  • 0.25 cup Sliced jalapeños (optional)
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat a large skillet over medium heat and add the olive oil. Once hot, sauté the diced onion until translucent, about 3 minutes, then add the minced garlic and cook for another 1 minute.

Step 3

Add the ground beef to the skillet and cook until browned, breaking it up with a spatula as it cooks. Drain any excess grease.

Step 4

Stir in the taco seasoning and 1 cup of enchilada sauce. Cook for an additional 2 minutes, then remove from heat.

In a mixing bowl, combine the cooked rice, black beans, and corn. Mix well.
