Ingredients

  • 8 oz dried tamarind pods
  • 8 cups water
  • 0.75 cups granulated sugar
  • 2 cups ice

Directions

Step 1

Carefully remove the hard shells from the tamarind pods and discard the outer shells and strings attached to the pulp.

Step 2

In a medium saucepan, bring 4 cups of water to a boil. Add the tamarind pulp and simmer for 8-10 minutes to soften it.

Step 3

Remove the saucepan from heat and let it cool for 5 minutes.

Step 4

Using your hands, mash the softened tamarind pulp in the saucepan to help release the seeds and pulp. For a more hands-free method, use the back of a spoon or a potato masher.

Step 5

Strain the mixture through a fine-mesh sieve or cheesecloth into a large pitcher, pressing down to extract as much liquid as possible. Discard the solids.

Step 6

Add the remaining 4 cups of cold water to the strained tamarind liquid, followed by the sugar. Stir well until the sugar is completely dissolved. Taste the mixture and adjust the sugar if needed.

Step 7

Chill the tamarind cooler in the refrigerator for at least 30 minutes, or serve it immediately over ice.

Step 8

Pour the Agua de Tamarindo into glasses over ice cubes and enjoy!
