Ingredients

  • 12 oz bow tie pasta (farfalle)
  • 1 cup canned black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 0.5 red onion, finely chopped
  • 0.25 cup fresh cilantro, chopped
  • 1 avocado, diced
  • 0.5 cup sour cream
  • 0.25 cup mayonnaise
  • 1 lime, juiced
  • 0.5 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Cook the bow tie pasta according to the package instructions in salted water until al dente. Drain and rinse under cold water to cool, then set aside.

Step 2

In a large bowl, combine the black beans, thawed corn, cherry tomatoes, diced red bell pepper, chopped red onion, and fresh cilantro.

Step 3

In a small bowl, whisk together the sour cream, mayonnaise, lime juice, ground cumin, chili powder, garlic powder, salt, and black pepper to make the dressing.

Step 4

Add the cooled pasta to the large bowl with the veggies and beans.

Step 5

Pour the dressing over the pasta and vegetable mixture. Toss everything together until evenly coated.

Step 6

Gently fold in the diced avocado, taking care not to mash it.

Step 7

Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld.

Step 8

Before serving, give the salad a quick toss and garnish with additional cilantro if desired.
