  • 2 teaspoons Chili powder
  • 2 teaspoons Ground cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground oregano
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 leaf Bay leaf
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh cilantro (optional, for garnish)
  • 1 lime Fresh lime (optional, for serving)

Directions

Step 1

Trim any excess fat from the beef chuck roast and cut it into large chunks, about 3-4 inches each.

Season the beef chunks with salt and pepper on both sides.

Heat olive oil in a skillet over medium-high heat. Sear the beef chunks until browned on all sides, about 2-3 minutes per side. Transfer the seared beef to the crock pot.
