  • 4 large russet potatoes
  • 3 tablespoons unsalted butter

  • 1 15-ounce can, drained and rinsed black beans
  • 1 cup frozen corn
  • 1 10-ounce can, drained diced tomatoes with green chilies (Rotel-style)
  • 2 tablespoons tomato paste
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1.5 teaspoons, divided salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons, chopped (optional) fresh cilantro
  • 1 tablespoon olive oil

Directions

Step 1

Peel and cube the russet potatoes. Place them in a large pot of salted water and bring to a boil. Reduce heat to a simmer and cook until potatoes are tender, about 15-20 minutes.

Step 2

While the potatoes cook, heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for 1 minute more.

Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if needed.
