Ingredients

  • 1 pound Ground beef (85% lean)
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, diced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Smoked paprika
  • 1 can (14.5 oz) Diced tomatoes with green chilies
  • 1 can (15 oz) Black beans, rinsed and drained
  • 1 cup Frozen corn
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.75 cup Cornmeal
  • 0.25 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt (for topping)
  • 0.75 cup Buttermilk
  • 1 large Egg
  • 1 cup Shredded cheddar cheese

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes, breaking it up with a wooden spoon.

Step 3

Add the diced onion, minced garlic, and red bell pepper to the skillet. Cook until the vegetables are softened, about 5 minutes.

Step 4

Stir in the cumin, chili powder, and smoked paprika. Cook for an additional 1-2 minutes to bloom the spices.

Step 5

Add the diced tomatoes with green chilies, black beans, and frozen corn to the skillet. Stir well to combine. Season with salt and black pepper, and simmer for 5 minutes. Remove the skillet from heat and transfer the mixture to a 9-inch baking dish.

Step 6

In a medium mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, and salt. In a separate small bowl, whisk the buttermilk and egg together.

Step 7

Gradually pour the wet ingredients into the dry ingredients, stirring until just combined. Fold in the shredded cheddar cheese.

Step 8

Spread the cornmeal buttermilk batter evenly over the beef and vegetable mixture in the baking dish.

Step 9

Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the topping is golden brown and firm to the touch.

Step 10

Let the Mexican Shepherd's Pie rest for 5-10 minutes before serving. Enjoy!
