  • 4 large russet potatoes
  • 4 tablespoons butter
  • 0.5 cup milk
  • 1 cup Monterey Jack cheese, shredded

  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 1 cup canned corn, drained
  • 1 cup black beans, rinsed and drained
  • 2 tablespoons tomato paste
  • 2 tablespoons taco seasoning
  • 0.5 cup chicken or beef broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 stalks green onions, sliced (for garnish)

Directions

Step 1

Peel and dice the russet potatoes into chunks. Place them in a large pot, cover with water, and bring to a boil. Cook for 15-20 minutes, or until tender.

Drain the potatoes and return them to the pot. Add butter, milk, 0.5 cup of shredded Monterey Jack cheese, and a pinch of salt and pepper. Mash until smooth. Set aside.

In a large skillet over medium heat, cook the chorizo until browned and crumbly. Remove from the pan and drain excess oil if needed. Set aside.
