Ingredients

  • 8 oz Penne pasta
  • 2 medium, boneless and skinless Chicken breast
  • 2 tbsp Olive oil
  • 1 medium, finely chopped Onion
  • 2 cloves, minced Garlic
  • 1 medium, diced Red bell pepper
  • 1 14 oz can Canned diced tomatoes
  • 1 cup Low-sodium chicken broth
  • 1 tbsp Taco seasoning
  • 1 tsp Ground cumin
  • 1 tsp Chili powder
  • 2 oz, softened Cream cheese
  • 1 cup Shredded Mexican cheese blend
  • 2 tbsp, chopped Fresh cilantro
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Cook the penne pasta according to the package instructions. Drain and set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the chicken breasts with salt and black pepper, then add them to the skillet. Cook for 4-5 minutes on each side, or until fully cooked and golden brown. Remove the chicken from the skillet, let it rest for a few minutes, and then slice it into thin strips.
