  • 0.5 lbs ground pork

  • 2 large eggs
  • 1 medium onion, finely diced

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 cup shredded Mexican cheese blend
  • 0.5 cup ketchup
  • 1 tbsp chipotle in adobo sauce
  • 3 lbs russet potatoes, peeled and quartered
  • 0.25 cup unsalted butter
  • 4 oz cream cheese
  • 0.5 cup milk (for potatoes)
  • 1 tbsp adobo sauce (from canned chipotle peppers)
  • 2 tbsp cilantro, chopped (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper and set aside.

Step 2

In a small bowl, combine the panko breadcrumbs and 1/4 cup milk. Let sit for 5 minutes to soften.

In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, eggs, diced onion, minced garlic, green chilies, cumin, chili powder, salt, black pepper, and shredded Mexican cheese blend. Mix until well combined, but do not overwork the mixture.
