Ingredients

  • 8 pieces Corn tortillas
  • 2 cups Black beans, cooked or canned (rinsed and drained)
  • 1.5 cups Vegan shredded cheese (cheddar or Mexican blend)
  • 2 cups Salsa (mild, medium, or spicy based on preference)
  • 1 cup Frozen corn kernels (thawed)
  • 1 cup Bell peppers (any color), diced
  • 0.5 cup Red onion, diced
  • 1 teaspoon Cumin
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Garlic powder
  • 2 tablespoons Fresh cilantro (optional, for garnish)
  • 1 sliced Avocado (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x9-inch casserole dish with cooking spray or a small amount of oil.

Step 2

In a medium mixing bowl, combine the black beans, thawed corn, diced bell peppers, red onion, cumin, smoked paprika, chili powder, and garlic powder. Stir well to evenly coat the ingredients with the spices.

Step 3

Spread 1/2 cup of salsa at the bottom of the prepared casserole dish to create a thin base layer.

Step 4

Arrange 4 corn tortillas on top of the salsa, overlapping slightly to cover the bottom.

Step 5

Spoon half of the black bean and vegetable mixture onto the tortillas, spreading it out evenly. Top with 1/2 cup of salsa and 1/2 cup of vegan shredded cheese.

Step 6

Repeat the layering process with the remaining tortillas, black bean mixture, salsa, and cheese. Finish the top layer with the remaining 1/2 cup of vegan shredded cheese.

Step 7

Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 8

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbling.

Step 9

Remove the casserole from the oven and let it sit for 5 minutes before slicing.

Step 10

Garnish with freshly chopped cilantro and serve with sliced avocado on the side, if desired.
