Ingredients

  • 1 pound ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 0.5 cup water
  • 16 ounces refried beans
  • 1 cup salsa
  • 6 flour tortillas (8-inch)
  • 3 cups shredded Mexican cheese blend
  • 0.5 cup sour cream
  • 2 tablespoons chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.

Step 2

In a large skillet over medium heat, cook the ground beef until browned, breaking it up into crumbles as it cooks. Drain excess grease.

Step 3

Add the chopped onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes, or until the onion is softened.

Step 4

Stir in the taco seasoning and 0.5 cup of water. Cook for 2-3 minutes, or until the beef mixture is thickened. Remove from heat and set aside.

Step 5

In a small bowl, mix the refried beans and salsa until well combined.

Step 6

Spread a thin layer of the bean mixture (about 2-3 tablespoons) on the bottom of the prepared baking dish. Place two tortillas over the bean layer, overlapping if necessary.

Step 7

Spread one-third of the refried bean mixture over the tortillas. Top with one-third of the beef mixture and one-third of the shredded cheese (about 1 cup).

Step 8

Repeat layering the tortillas, bean mixture, beef mixture, and cheese two more times, finishing with cheese on the top layer.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.

Step 10

Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 11

Remove from the oven and let the casserole cool for 5 minutes before slicing.

Step 12

Serve warm, topped with a dollop of sour cream and a sprinkle of chopped cilantro, if desired.
