  • 1 medium red bell pepper, sliced
  • 1 medium green bell pepper, sliced
  • 1 medium zucchini, sliced into half-moons
  • 1 cup frozen corn
  • 1 15-ounce can black beans, drained and rinsed
  • 2 tablespoons lime juice
  • 0.25 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups tortilla chips (for serving)
  • 1 medium avocado, sliced (for garnish)
  • 0.5 cup grated cheese (optional)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.
