Ingredients

  • 1 pound ground beef
  • 1 cup (uncooked) quinoa
  • 1 tablespoon olive oil
  • 1 medium (diced) onion
  • 1 medium (diced) bell pepper
  • 3 cloves (minced) garlic
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces, drained and rinsed) black beans
  • 1 cup (fresh, canned, or frozen) corn kernels
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.25 teaspoon (optional for added heat) cayenne pepper
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper
  • 2 cups chicken or vegetable broth
  • 1 tablespoon (freshly squeezed) lime juice
  • 0.25 cup (chopped, for garnish) cilantro
  • 0.5 cup (optional, for topping) shredded cheese

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and bell pepper. Sauté for 4-5 minutes until softened.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Push the vegetables to one side of the skillet. Add the ground beef to the other side and cook for 5-6 minutes, breaking it apart with a spatula until it is browned and fully cooked. Combine the beef with the vegetables.

Step 5

Stir in the chili powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper. Mix until the beef and vegetables are evenly coated with the spices.

Step 6

Add the quinoa, diced tomatoes (with juices), black beans, corn, and chicken or vegetable broth to the skillet. Stir well to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Cover the skillet with a lid and let it simmer for 20 minutes, or until the quinoa is cooked and has absorbed most of the liquid. Stir occasionally to prevent sticking.

Step 8

Once the quinoa is tender, remove the skillet from the heat and stir in the lime juice.

Step 9

Garnish with chopped cilantro and optionally sprinkle with shredded cheese before serving.

Step 10

Serve warm and enjoy your Mexican Ground Beef Quinoa Skillet!
