Preheat your oven to 375°F (190°C).
In a medium pot, combine the uncooked rice and water. Bring to a boil, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the rice is tender and the water is fully absorbed. Set aside.
While the rice cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
