Ingredients

  • 16 pieces large shrimp (peeled and deveined, tails on)
  • 4 ounces cream cheese (softened)
  • 1 piece jalapeño pepper (seeded and finely chopped)
  • 2 tablespoons fresh cilantro (finely chopped)
  • 2 teaspoons lime juice
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper
  • 0.75 cup panko breadcrumbs
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

Butterfly the shrimp by slicing them along the back, being careful not to cut all the way through. Flatten them slightly and set aside.

Step 3

In a mixing bowl, combine the cream cheese, chopped jalapeño, cilantro, lime juice, smoked paprika, garlic powder, salt, and black pepper. Mix until smooth and well combined.

Step 4

Using a small spoon, fill the cavity of each butterflied shrimp with approximately 1 teaspoon of the cream cheese mixture.

Step 5

Sprinkle the filled shrimp with panko breadcrumbs, pressing gently so the breadcrumbs adhere to the filling.

Step 6

Drizzle the olive oil evenly over the top of the shrimp to help the breadcrumbs crisp up in the oven.

Step 7

Arrange the prepared shrimp on the lined baking sheet. Bake in the preheated oven for 8-10 minutes, or until the shrimp are pink and opaque, and the breadcrumbs are golden brown.

Step 8

Remove from the oven and let the shrimp rest for 2-3 minutes before serving.

Step 9

Serve warm with your favorite dipping sauce or a squeeze of fresh lime.
