Ingredients

  • 2 pounds boneless pork shoulder
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 4 cloves garlic cloves, minced
  • 2 peppers chipotle peppers in adobo sauce
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons tomato paste
  • 1 cup chicken broth
  • 2 tablespoons lime juice
  • 2 tablespoons fresh cilantro, chopped
  • 12 pieces corn or flour tortillas

Directions

Step 1

1. Heat a large skillet over medium-high heat and add olive oil.

2. Pat the pork shoulder dry with paper towels and season with 1 teaspoon of salt and 0.5 teaspoons of black pepper.

3. Sear the pork on all sides in the skillet until browned, about 2-3 minutes per side. Transfer the pork to the crock pot.

4. In the same skillet, sauté the diced onion until softened, about 3-5 minutes. Add the minced garlic and cook for another 1 minute.
