Ingredients

  • 1 cup white rice
  • 2 cups water
  • 1 cinnamon stick
  • 2 cups milk
  • 0.5 cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar (optional)
  • 0.5 teaspoons ground cinnamon (for garnish)

Directions

Step 1

Rinse the rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium saucepan, bring the water and cinnamon stick to a boil over medium-high heat.

Step 3

Add the rinsed rice to the saucepan and reduce the heat to low. Cover and simmer for 15 minutes, or until the rice is tender and the water is absorbed.

Step 4

Remove the cinnamon stick and add the milk, sweetened condensed milk, and vanilla extract to the saucepan. Stir to combine.

Step 5

Cook over medium heat, stirring frequently, for 10–15 minutes, or until the mixture thickens slightly and becomes creamy. Taste and add sugar if desired for extra sweetness.

Step 6

Remove the saucepan from heat and let the rice rest for 5 minutes to further thicken.

Step 7

Spoon the Mexican Cinnamon Rice into serving bowls and sprinkle with ground cinnamon as a garnish.

Step 8

Serve warm or chilled as a dessert or side dish. Enjoy!
