Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Fajita seasoning
  • 1 medium Red bell pepper
  • 1 medium Green bell pepper
  • 1 medium Yellow onion
  • 4 pieces Large flour tortillas
  • 1 cup Cheddar cheese, shredded
  • 1 cup Sour cream
  • 1 cup Salsa
  • 1 tablespoon Lime juice
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Slice the chicken breasts into thin strips.

Step 2

In a bowl, combine olive oil, fajita seasoning, lime juice, salt, and black pepper. Add the chicken strips and marinate them for at least 15 minutes.

Step 3

While the chicken marinates, prepare the vegetables. Slice the red and green bell peppers and the yellow onion into thin strips.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated chicken strips and cook for 5-7 minutes until they are golden brown and fully cooked. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add another tablespoon of olive oil (if needed) and sauté the sliced peppers and onion for 4-5 minutes until they are tender but still slightly crisp.

Step 6

Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.

Step 7

To assemble each wrap, place a handful of the sautéed peppers and onions in the center of a tortilla. Top with cooked chicken strips, shredded cheddar cheese, a dollop of sour cream, and a spoonful of salsa.

Step 8

Fold in the sides of the tortilla, then roll it up tightly into a wrap.

Step 9

Serve the wraps warm with additional sour cream and salsa on the side, if desired.
