Ingredients

  • 2 pounds Beef stew meat
  • 2 tablespoons Olive oil
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 1.5 cups Beef broth
  • 1 cup Tomato sauce
  • 1 can (10 oz) Diced tomatoes with green chilies (e.g., Rotel)
  • 1 teaspoon Chipotle chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional garnish)

Directions

Step 1

If cooking on the stovetop, heat a large pot or Dutch oven over medium-high heat and add the olive oil. If using a crockpot, heat a skillet with the olive oil instead.

Step 2

Sear the beef stew meat in batches until browned on all sides. This step helps lock in flavor and should take 2–3 minutes per batch. Transfer the browned meat to the crockpot if using.

Step 3

In the same pot or skillet, add the diced onion and cook until softened, about 3–5 minutes. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 4

Pour in 1/2 cup of the beef broth to deglaze the pan, scraping up any browned bits from the bottom. If using a crockpot, transfer this mixture to the crockpot with the beef.

Step 5

In the pot or crockpot, combine the remaining beef broth, tomato sauce, diced tomatoes with green chilies, chipotle chili powder, ground cumin, paprika, dried oregano, salt, and black pepper. Stir everything together to combine.

Step 6

For Crockpot: Set the crockpot to low and cook for 6–8 hours, or on high for 3–4 hours, until the beef is tender and flavorful.

Step 7

For Stovetop: Reduce the heat to low, cover, and simmer for 2–3 hours, stirring occasionally, until the beef is tender and the sauce has thickened slightly.

Step 8

Taste and adjust the seasoning with additional salt or spices if needed.

Step 9

Serve hot, garnished with freshly chopped cilantro, if desired. Enjoy with rice, warm tortillas, or your favorite sides!
