Preheat your oven to broil, or heat an outdoor fire pit or indoor stovetop burner.
Break the cinnamon graham crackers in half to make 16 cracker squares. Set them aside.
If using dark chocolate without chili, sprinkle the ground cinnamon and cayenne pepper evenly over the chocolate pieces. If using pre-spiced chili chocolate, skip this step.
Place a piece of chocolate (about 1 ounce) on top of 8 of the graham cracker squares.
On a skewer or roasting fork, toast the marshmallows over an open flame or under the broiler until golden brown and gooey. Rotate as needed for even roasting.
Carefully place one toasted marshmallow on top of each piece of chocolate.
Top each marshmallow with the remaining graham cracker squares to form a sandwich. Gently press down to combine the layers.
