Ingredients

  • 12 oz spaghetti
  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 1 medium red bell pepper, diced
  • 4 oz green chilies, diced
  • 1 packet taco seasoning mix
  • 14.5 oz canned diced tomatoes with green chilies
  • 1 cup tomato sauce
  • 2 cups Mexican blend shredded cheese
  • 1 cup sour cream
  • 0.25 cup fresh cilantro, chopped
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the spaghetti according to the package instructions in a large pot of salted boiling water. Drain and set aside.

Heat olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, and sauté for 3-4 minutes until softened.

Add the ground beef to the skillet and cook until browned, breaking it up as it cooks, about 5-7 minutes. Drain any excess fat.

Stir in the taco seasoning mix and cook for 1 minute until well blended.
