Ingredients

  • 16 oz Rotini pasta
  • 1 lb Ground beef
  • 1 packet Taco seasoning
  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn kernels (canned or frozen)
  • 1 cup Cherry tomatoes, halved
  • 1 cup Shredded cheddar cheese
  • 3 stalks Green onions, thinly sliced
  • 1 cup Sour cream
  • 0.5 cup Mayonnaise
  • 0.25 cup Fresh cilantro, chopped
  • 2 tbsp Lime juice
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and rinse under cold water to cool the pasta. Set aside.

Step 2

In a large skillet over medium heat, cook the ground beef until browned and fully cooked. Drain excess fat. Stir in the taco seasoning and 1/4 cup of water. Cook for an additional 2 minutes, then remove from heat and let cool.

Step 3

In a large mixing bowl, combine the cooled pasta, cooked taco-seasoned beef, black beans, corn, cherry tomatoes, shredded cheddar cheese, and green onions.

Step 4

In a medium bowl, whisk together the sour cream, mayonnaise, chopped cilantro, lime juice, salt, and black pepper to create the dressing.

Step 5

Pour the dressing over the pasta mixture and toss until everything is evenly coated.

Step 6

Cover and refrigerate the pasta salad for at least 1 hour to allow the flavors to meld.

Step 7

Before serving, give the salad a quick toss and garnish with additional chopped cilantro if desired.
