Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cups Milk
  • 0.5 cups Unsalted butter (melted and cooled)
  • 2 Eggs
  • 1 teaspoons Vanilla extract
  • 1 cup Fresh or frozen blueberries (optional, or substitute with your favorite mix-ins like chocolate chips or chopped nuts)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups with cooking spray.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Step 3

In a separate medium-sized bowl, whisk together the milk, melted butter, eggs, and vanilla extract until smooth.

Step 4

Make a well in the center of the dry ingredients and pour the wet ingredients into the well. Gently fold the mixture together using a spatula or spoon until just combined. Be careful not to overmix; some lumps are okay.

Step 5

If using blueberries or other mix-ins, gently fold them into the batter.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 7

Bake in the preheated oven for 18-22 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.

Step 8

Remove the muffin tin from the oven and let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Enjoy!
