  • 340 grams (softened to room temperature) Unsalted butter
  • 2 teaspoons Vanilla extract
  • 1 pinch Salt

Directions

Step 1

In a heatproof mixing bowl, combine the egg whites and granulated sugar. Set the bowl over a pot of simmering water (double boiler setup), ensuring the bottom of the bowl does not touch the water.

Step 2

Whisk the egg whites and sugar continuously until the mixture reaches 160°F (70°C) on a candy thermometer, or until the sugar is fully dissolved and the mixture is warm to the touch.

Step 3

Remove the bowl from the heat and transfer it to a stand mixer fitted with the whisk attachment. Whip the mixture on high speed until it forms stiff, glossy peaks and the bowl is no longer warm to the touch. This usually takes 8–10 minutes.

Step 4

Switch to the paddle attachment. Gradually add the softened butter to the meringue, a tablespoon at a time, mixing on medium speed until fully incorporated. The mixture might look curdled at some point, but keep mixing—this is normal and will smooth out.

Step 5

Add the vanilla extract and a pinch of salt. Continue mixing until the buttercream is silky and smooth, about 2–3 minutes.

Step 6

Use the meringue buttercream immediately, or store it in an airtight container in the refrigerator for up to 1 week. Before use, let it come to room temperature and re-whip for best consistency.
