Ingredients

  • 500 grams pork shoulder (cut into 1-inch cubes)
  • 200 grams pork liver (cut into small cubes)
  • 2 medium potatoes (peeled and diced)
  • 2 medium carrots (peeled and diced)
  • 1 large red bell pepper (diced)
  • 1 large green bell pepper (diced)
  • 1 cup tomato sauce
  • 1.5 cups water
  • 1 medium onion (chopped)
  • 4 cloves garlic (minced)
  • 3 tablespoons soy sauce
  • 2 tablespoons calamansi juice (or lemon juice)
  • 3 tablespoons cooking oil
  • 2 bay leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

In a bowl, marinate the pork shoulder cubes with soy sauce and calamansi juice for 20 minutes. Set aside.

Step 2

Heat cooking oil in a large pot over medium heat. Sauté the garlic until golden and fragrant, then add the chopped onion and cook until softened.

Step 3

Add the marinated pork (reserve the marinade) and cook for 5-7 minutes until the meat is browned on all sides.

Step 4

Pour in the reserved marinade, tomato sauce, and water. Stir in the bay leaves, salt, and black pepper. Bring to a boil.

Lower the heat to a simmer, cover the pot, and cook for 30-40 minutes or until the pork is tender. Stir occasionally to prevent sticking.

Add the diced red and green bell peppers. Simmer for another 3-5 minutes until the bell peppers are tender-crisp.

Taste and adjust seasoning with additional salt or pepper if needed. Remove the bay leaves before serving.
