Memories of Provence Wheat Loaf

Transport your taste buds to the sun-soaked fields of southern France with this Memories of Provence Wheat Loaf, a wholesome, aromatic bread infused with the rustic charm of the Mediterranean. Made with a blend of whole wheat and all-purpose flour, this loaf is elevated by the fragrant addition of Herbes de Provence—a dried medley of thyme, rosemary, oregano, and a hint of lavender—that gives it its signature herbal aroma. A touch of honey and olive oil provides natural sweetness and moisture, while the slow-rising dough ensures a tender yet hearty crumb. Perfectly golden with a lightly floured, rustic crust, this bread is as delightful to bake as it is to eat. Serve it warm with a drizzle of olive oil, alongside a cheese board, or as the base for your favorite sandwiches. A must-try for bread enthusiasts seeking a taste of Provence in every bite!

Ingredients

  • 400 g whole wheat flour
  • 100 g all-purpose flour
  • 7 g instant yeast
  • 300 ml warm water
  • 50 ml milk
  • 30 ml olive oil
  • 15 ml honey
  • 8 g salt
  • 10 g Herbes de Provence (dried mix of thyme, rosemary, oregano, and lavender)
  • 20 g extra flour (for dusting)

Directions

Step 1

In a large mixing bowl, combine the whole wheat flour, all-purpose flour, instant yeast, salt, and Herbes de Provence. Stir well to ensure the ingredients are evenly distributed.

Step 2

In a separate small bowl, whisk together the warm water, milk, olive oil, and honey until the honey is fully dissolved.

Step 3

Gradually pour the wet ingredients into the dry mixture. Using a wooden spoon or your hands, mix until a shaggy dough forms.

Step 4

Transfer the dough onto a lightly floured surface. Knead for 8–10 minutes until the dough is smooth and elastic. Add a little extra flour if the dough feels too sticky.

Step 5

Shape the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel and let it rise in a warm, draft-free spot for about 1 hour, or until it has doubled in size.

Step 6

Once the dough has risen, punch it down gently to release any air pockets. Shape it into a loaf or your preferred bread shape and place it onto a parchment-lined baking sheet.

Step 7

Cover the shaped dough with a kitchen towel and let it rise for another 30 minutes, or until it has puffed up noticeably.

Step 8

Preheat your oven to 200°C (400°F) during the second rise.

Step 9

Dust the top of the loaf with a little extra flour for a rustic look. Optionally, score the top with a sharp knife or razor for decorative patterns.

Step 10

Bake the loaf in the preheated oven for 25–30 minutes, or until the crust is golden brown and the loaf sounds hollow when tapped on the bottom.

Step 11

Remove the bread from the oven and allow it to cool on a wire rack for at least 15 minutes before slicing and serving.
