Ingredients

  • 3 cups All-purpose flour
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground cloves
  • 0.5 teaspoon Salt
  • 2 teaspoons Baking soda
  • 0.75 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 0.5 cup Molasses
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Coarse sugar (for rolling)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the flour, ground ginger, cinnamon, cloves, salt, and baking soda. Set aside.

Step 3

In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.

Step 4

Add the molasses, egg, and vanilla extract to the butter-sugar mixture and beat until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Scoop out 1.5-tablespoon portions of dough and roll them into balls. Roll each ball in coarse sugar until fully coated.

Step 7

Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 8

Bake each batch in the preheated oven for 8-10 minutes, or until the edges are set but the centers are still soft.

Step 9

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Step 10

Serve the cookies with a warm beverage and enjoy! Store any leftovers in an airtight container for up to a week.
