Ingredients

  • 16 oz Spaghetti
  • 2 cups Cherry tomatoes
  • 1 medium Cucumber
  • 2 medium Bell peppers (any color)
  • 0.5 Red onion
  • 1 cup Black olives, sliced
  • 1 cup Cheddar cheese, cubed
  • 1.5 cups Italian dressing
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool.

Step 2

While the pasta is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, bell peppers, and red onion.
