Ingredients

  • 200 grams Dark chocolate (70% cocoa)
  • 100 grams Unsalted butter (plus extra for greasing)
  • 100 grams Granulated sugar
  • 2 pieces Large eggs
  • 2 pieces Egg yolks
  • 50 grams All-purpose flour
  • 2 tablespoons Cocoa powder (for dusting)

Directions

Step 1

Preheat your oven to 200°C (390°F). Grease four individual ramekins with butter and dust the insides with cocoa powder to prevent sticking. Set aside.

Step 2

In a heatproof bowl over a pot of simmering water, melt the dark chocolate and butter together, stirring occasionally until smooth. Remove from heat and let it cool slightly.

Step 3

In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until the mixture is pale and slightly thickened.

Step 4

Slowly pour the melted chocolate mixture into the egg mixture, gently folding to combine.

Step 5

Sift the flour into the mixture and fold gently until fully incorporated and smooth. Do not overmix.

Step 6

Divide the batter evenly between the prepared ramekins, filling each about three-quarters full.

Step 7

Place the ramekins on a baking tray and bake in the preheated oven for 10-12 minutes, or until the tops are just set but the centers remain gooey.

Step 8

Remove from the oven and let the puddings rest for 1-2 minutes. Carefully run a knife around the edges to loosen, then invert each onto a plate or serve directly in the ramekins.

Step 9

Serve immediately while warm. Optionally, garnish with a scoop of vanilla ice cream or a dusting of powdered sugar.
