Ingredients

  • 6 pieces chicken thighs (bone-in, skin-on)
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1.5 cups chicken broth
  • 0.5 cups heavy cream
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the chicken thighs on both sides with salt and pepper. Lightly coat them in flour, shaking off any excess.

Step 2

Heat the olive oil in a large, deep skillet over medium-high heat. Add the chicken thighs skin-side down and cook for 5–7 minutes until the skin is golden and crisp. Flip and cook the other side for an additional 3–4 minutes. Remove the chicken from the skillet and set aside on a plate.

Step 3

Reduce the heat to medium and add the butter to the skillet. Once melted, add the finely chopped onion and sauté for 4–5 minutes until softened and translucent.

Step 4

Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 5

Pour in the chicken broth and bring to a simmer. Use a wooden spoon to scrape any browned bits from the bottom of the skillet to deglaze the pan. This adds extra flavor to the sauce.

Step 6

Stir in the heavy cream and thyme leaves. Return the chicken to the skillet, skin-side up. Ensure that the sauce does not completely cover the chicken to keep the skin crispy.

Step 7

Reduce the heat to low, cover the skillet with a lid, and let the chicken simmer for 25–30 minutes, or until cooked through and tender. The internal temperature of the chicken should reach 165°F (74°C).

Step 8

Taste the sauce and adjust the seasoning with additional salt and pepper, if needed.

Step 9

Garnish with freshly chopped parsley before serving. Serve hot with mashed potatoes, rice, or crusty bread to soak up the creamy sauce.
