Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons butter
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 medium celery stalks, diced
  • 2 cloves garlic cloves, minced
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup chicken broth
  • 0.5 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 1 cup frozen green peas
  • 1 package (16 ounces) canned biscuits
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried thyme

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with nonstick spray and set aside.

Step 2

Season the chicken breasts with salt, pepper, and thyme. Heat the butter in a large skillet over medium heat. Sear the chicken on both sides until golden, about 4 minutes per side. Transfer to a cutting board and let rest for 5 minutes, then chop into bite-sized pieces.

Step 3

In the same skillet, add the diced onion, carrots, celery, and garlic. Sauté for 5-7 minutes until softened and fragrant.

Step 4

Reduce the heat to low and add the cream of chicken soup, chicken broth, and sour cream to the skillet. Stir well to combine into a creamy mixture.

Step 5

Add the shredded cheddar cheese, frozen peas, and chopped chicken to the mixture. Stir until everything is well incorporated. Taste and adjust seasonings with additional salt or pepper if needed.

Step 6

Pour the chicken mixture into the prepared baking dish and spread it out evenly.

Step 7

Open the canned biscuits and place them on top of the chicken mixture, evenly spacing them across the surface.

Step 8

Bake the casserole in the preheated oven for 25-30 minutes, or until the biscuits are golden brown and cooked through, and the filling is bubbling around the edges.

Step 9

Remove from the oven and let the casserole rest for 5 minutes before serving. Serve hot and enjoy!
