  • 0.75 cup pearl barley, rinsed
  • 2 leaves bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat.

Season the beef cubes with salt and pepper. Sear the beef in batches until browned on all sides, adding the second tablespoon of olive oil as needed. Remove the beef and set aside.
