Ingredients

  • 1 whole Cantaloupe
  • 1 whole Honeydew melon
  • 3 whole Peaches
  • 10 leaves Fresh mint leaves
  • 1 whole Lime
  • 1 tablespoon Honey
  • 0.25 teaspoon Salt

Directions

Step 1

Start by cutting the cantaloupe and honeydew melons in half and removing their seeds. Use a melon baller to scoop out bite-sized pieces and transfer them to a large mixing bowl. If you don't have a melon baller, you can chop the melons into small cubes.

Step 2

Wash the peaches thoroughly. Slice each peach in half, remove the pit, and slice the fruit into thin wedges. Add the peach slices to the bowl of melons.

Step 3

Stack the mint leaves on top of one another, roll them into a tight bundle, and thinly slice them into ribbons (a technique called chiffonade). Sprinkle the mint over the fruit.

Step 4

In a small bowl, zest the lime and then juice it. Combine the lime juice, lime zest, honey, and salt, whisking until the honey is fully dissolved and the dressing is smooth.

Drizzle the lime-honey dressing over the fruit and gently toss everything together to coat evenly.
