Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 6 cups Chicken broth
  • 2 cups All-purpose flour
  • 1 tablespoon Baking powder
  • 1.5 teaspoons Salt
  • 3 tablespoons Unsalted butter
  • 0.75 cup Milk
  • 1 cup Heavy cream
  • 2 medium Carrots, diced
  • 2 stalks Celery, diced
  • 1 cup Frozen green peas
  • 1 tablespoon Cooking oil
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat a large pot over medium heat. Add the cooking oil, then sear the chicken breasts for 3-4 minutes on each side until lightly browned. Remove the chicken and set aside.

Step 2

In the same pot, sauté the diced carrots and celery for 3-4 minutes until they soften slightly.

Step 3

Return the chicken to the pot, then pour in the chicken broth and bring to a simmer. Cover and cook for 20 minutes, or until the chicken is fully cooked and tender.

Step 4

While the chicken simmers, prepare the dumpling dough. In a mixing bowl, combine the flour, baking powder, and 1 teaspoon of salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

Step 5

Stir the milk into the flour mixture until a soft dough forms. Do not overmix.

Step 6

Once the chicken is done, remove it from the pot and shred it using two forks. Return the shredded chicken to the pot and stir in the heavy cream, frozen peas, and black pepper. Adjust salt levels as needed.

Step 7

Bring the soup to a gentle simmer. Using a tablespoon, drop spoonfuls of the dumpling dough into the pot, ensuring they don’t touch. Cover the pot with a lid and let the dumplings cook for 10-12 minutes, or until they are puffed and cooked through.

Step 8

Serve immediately, garnished with fresh parsley if desired.
