Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons unsalted butter
  • 1 medium-sized yellow onion, diced
  • 2 medium-sized carrots, sliced
  • 2 medium-sized celery stalks, sliced
  • 6 cups chicken broth
  • 2 tablespoons all-purpose flour
  • 1 cup milk
  • 2 teaspoons baking powder
  • 1.5 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 cup all-purpose flour (for dumplings)
  • 0.25 cups whole milk (for dumplings)
  • 2 tablespoons parsley, chopped (optional garnish)

Directions

Step 1

In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté for 5-7 minutes until the vegetables are softened.

Step 2

Add the chicken breasts to the pot and season with 1 teaspoon of salt and 0.5 teaspoons of black pepper. Pour in the chicken broth and bring the mixture to a boil.

Step 3

Reduce the heat to a simmer and cook the chicken for 20 minutes, or until it is cooked through. Carefully remove the chicken from the pot and shred it using two forks.

Step 4

In a small bowl, whisk together 2 tablespoons of all-purpose flour with 1 cup of milk until smooth. Slowly stir this mixture into the pot to thicken the broth. Let it simmer for 5 minutes.

Step 5

While the broth is thickening, prepare the dumpling dough. In a medium bowl, whisk together 1 cup of flour, 2 teaspoons of baking powder, and 0.5 teaspoons of salt. Add 0.25 cups of milk and stir until a sticky dough forms.

Step 6

Drop spoonfuls of the dumpling dough into the simmering broth. Cover the pot with a lid and let the dumplings cook for 10 minutes without lifting the lid. This will allow them to steam and become fluffy.

Step 7

Add the shredded chicken back into the pot and gently stir to combine. Taste the broth and adjust seasoning if needed.

Step 8

Serve the chicken and dumplings hot, garnished with chopped parsley if desired.
