Ingredients

  • 1 medium head Green cabbage
  • 1 large Yellow onion
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 3 cloves Garlic
  • 2 tablespoons Olive oil
  • 6 cups Vegetable broth
  • 1 15-ounce can Diced tomatoes
  • 2 tablespoons Tomato paste
  • 3 tablespoons Apple cider vinegar
  • 2 tablespoons Brown sugar
  • 1 whole Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Wash and core the green cabbage, then slice it into thin shreds. Set aside.

Step 2

Peel and dice the yellow onion. Dice the carrots and celery stalks into small, uniform pieces. Mince the garlic.

Step 3

In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes, or until the vegetables are softened.

Step 4

Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.

Step 5

Pour in the vegetable broth and bring to a boil. Add the diced tomatoes (with their juices), tomato paste, and bay leaf to the pot. Stir to combine.

Step 6

Add the shredded cabbage to the pot and reduce the heat to a simmer. Cook for 15-20 minutes, or until the cabbage is tender.

Step 7

Stir in the apple cider vinegar, brown sugar, salt, and black pepper. Taste and adjust the seasonings as needed for the perfect balance of sweet and sour.

Step 8

Remove and discard the bay leaf. Ladle the soup into bowls and garnish with fresh parsley before serving.
