Ingredients

  • 500 grams squid (cleaned, tubes and tentacles)
  • 250 ml buttermilk
  • 100 grams cornstarch
  • 50 grams all-purpose flour
  • 2 teaspoons black pepper
  • 1 teaspoon white pepper
  • 2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon chili flakes
  • 500 ml vegetable oil (for frying)
  • 2 stalks spring onions (thinly sliced)
  • 1 piece red chili (thinly sliced)
  • 1 piece lime (cut into wedges)

Directions

Step 1

Clean the squid thoroughly under cold water. Slice the squid tubes into rings about 1 cm thick, and keep the tentacles whole if small.

Step 2

Place the squid in a bowl and cover with the buttermilk. Let it marinate for 15 minutes to tenderize.

Step 3

In a mixing bowl, combine the cornstarch, all-purpose flour, black pepper, white pepper, sea salt, garlic powder, and chili flakes.

Remove the squid from the buttermilk, allowing excess to drip off. Dredge the squid pieces in the flour mixture, ensuring they are evenly coated. Shake off any excess flour.

Heat the vegetable oil in a deep skillet or wok over medium-high heat until it reaches 180°C (350°F). Use a thermometer to ensure the oil is at the correct temperature.
